Curried Deviled Eggs

Deviled eggs are always immediately gobbled up at any picnic or party, but these eggs seem to be grabbed even faster than most other recipes. The curry powder adds a unique flavor to the eggs that really makes the flavor pop, but it isn't so different that it really upsets the purists. Most people cannot even identify what the different flavor is, they just know they like it. This is our basic recipe with the addition of curry powder…if you normally add different things like sweet relish or minced onion, go ahead and add them too as the curry flavor is great with both of those additions. Makes 8 servings

Peel the eggs and cut them lengthwise in half. Remove the yolks and place in a small bowl. Mash the yolks until smooth and add the mayonnaise. Mix until a smooth paste forms. Mix in the scallions, curry powder, and salt and pepper to taste. Spoon the mixture into the egg halves, or pipe using a pastry bag and star tip. Cover and refrigerate for up to 8 hours before serving.
